3 1/2 cups old-fashioned rolled oats
2 tsp baking powder
1 tsp salt
1/2 tsp cinnamon
1/2 cup brown sugar
1/2 cup coconut
1/4 cup oil
1 apple, cored and diced (optional)
2 eggs
1 cup milk
Mix well and pour into and 8x8 pan. Bake for 25 minutes at 350. This is a pretty flexible recipe and you can add nuts, dried fruit or whatever you want. This also reheats well if you keep it in the fridge.
