O Henry Squares



Another classic from my childhood! These were one of my absolute favourites. I've always wondered why they were called O Henry squares because to me they don't taste much like an O Henry, but they are really really good!



2/3 cup margarine
1 cup brown sugar
1/2 cup corn syrup
4 cups oatmeal
1 cup coconut
2 tsp baking soda
2 tsp vanilla
2/3 cup peanut butter
3/4 cup chocolate chips

Bring margarine, sugar and corn syrup to a boil. Remove from heat and add oatmeal, coconut, baking soda and vanilla. Stir well and pour into a cookie sheet. Bake 8-10 minutes at 350. Meanwhile, melt the peanut butter and chocolate chips together (about two minutes in the microwave works well) to make the icing and ice the squares while still warm. Cool, cut into squares and keep in the fridge.
