Blondies

1/2 cup butter, melted
1 cup brown sugar
1 egg
1 tsp vanilla
1/2 tsp baking powder
1/8 tsp baking soda
pinch of salt
1 cup flour
1/3 cup butterscotch chips, chocolate chips and/or walnuts

Mix and spread into an 8x8 pan. Bake 25-30 minutes at 350 or microwave on high 5 minutes.

Coconut Crack

graham crackers
1/2 cup butter
1/2 cup brown sugar
1 cup coconut
chocolate chips
 
Line a 9x9 pan with foil, and then with graham crackers. Melt the butter and mix with sugar and coconut. Spread onto the graham crackers and bake for 5 minutes at 425. Sprinkle on the chocolate chips and return to the oven for 1-2 minutes, until the chocolate chips melt and you can spread them with a knife. Cool completely, and break up into chunks.

Chewy Granola Bars

1 cup brown sugar
1/3 cup peanut butter
1/2 cup corn syrup
1/2 cup margarine, melted
2 tsp vanilla
1/2 cup raisins or dried cranberries
3 cups oatmeal
1/3 cup wheat germ
1/2 cup coconut
2 tsp sesame seeds
1/2 cup sunflower seeds
1 cup chocolate chips

Blend the sugar, peanut butter, syrup and margarine. Add vanilla. Add remaining ingredients and mix until blended. Press into a 10x15 cookie sheet and bake 15-20 minutes at 350. Cool and cut into bars.

Often I don't have all the ingredients listed but this recipe is very flexible and you can just about put in anything you want.

New York Delight

1 cup butter
1.5 cups sugar
4 eggs, beaten
2 cups coconut
6 cups mini marshmallows
3 cups graham crumbs
1 tsp vanilla

Boil the butter, sugar, eggs and coconut together for one minute, stirring constantly. Add the marshmallows, reduce heat, and stir until they are all melted. Take off the heat and add the vanilla and the graham crumbs. Pour into a 9x13 pan lined with parchment paper and freeze hard. Once frozen, you can lift it out of the pan by the paper and cut it into cubes. Keep in the freezer.

Easy Cream Cheese Brownies

Brownie layer (same as Never Fail Brownies):

1/2 cup margarine
1 c. sugar
2 eggs
1/4 tsp. salt
1/2 tsp. vanilla
1/2 c. flour
1/2 c. cocoa

Cream Cheese layer:

4 oz cream cheese (I usually use a little more)
1 egg
1/2 c. sugar
2 T flour
1/2 c. chopped walnuts (optional)

Mix brownie and pour into an 8x8 square pan. Mix cream cheese layer and pour over top. Swirl the cream cheese into the brownies a little with a knife. Bake for 35 minutes at 350.

No-Bake Oatmeal Bars

1 cup butter
1/3 cup brown sugar
1 tsp vanilla
3 cups oatmeal
1 cup coconut
1/4 tsp salt
1 cup chocolate chips
3/4 cup peanut butter

Melt the butter on the stove, then add the sugar, vanilla, oats, coconut and salt. Keep on low for 5 minutes. Meanwhile, melt the chocolate chips and peanut butter together. Press half the oats mixture into an 8x11 pan, pour the chocolate over top and spread, then top with the rest of the oats. Press it down gently with a spatula, then refrigerate to harden.

Never Fail Brownies


1/2 cup margarine
1 cup white sugar
2 eggs
1/4 tsp salt
1/2 tsp vanilla
1/2 cup flour
1/2 cup cocoa
1/2 cup nuts (optional)

Blend ingredients well in order given. Spread in an 8x8 inch greased baking pan (or line with foil for easy clean-up). Bake at 350 for 20 minutes or until just done. Do not overbake.

This recipe doubles nicely into a 9x13 pan but may take longer to bake.

For very easy icing, sprinkle the brownie with chocolate chips when you take it out of the oven, then spread with a knife once they are warm and soft enough to spread.

No-Bake Cheesecake


Crust:
1 cup graham cracker crumbs
1/4 cup margarine or butter

Melt the butter, mix it with the crumbs and press firmly into an 8x8 square baking dish.

Filling:
1 pkg. cream cheese, softened
3/4 cup icing sugar
2 cups whipped cream

Mix the icing sugar into the cream cheese, then fold in the whipped cream until well blended. Spread onto the graham crumb crust and refrigerate until ready to eat. Top with canned pie filling, fresh fruit or even chocolate or caramel sauce.

Munch Bars

Good alternative to Rice Krispie squares, especially when you don't have enough Rice Krispies!

1/2 cup margarine
64 large marshmallows or 8 cups mini ones
2 tsp vanilla
2 cups oatmeal
2 cups coconut
3 cups Rice Krispies

Melt the margarine and add the marshmallows. Microwave on high 2 minutes at a time until marshmallows are melted. Stir in vanilla and other ingredients. Press into a 9x13 pan.

Chocolate Chip Cookie Bars

Otherwise known as Chipit Party Bars.

Base:
1 cup brown sugar
1 cup flour
1/2 cup coconut
1 tsp baking soda
1/2 cup oatmeal
1/2 cup butter, melted

Mix and press into a 9x13 pan.



Topping:
2 eggs, beaten
1/4 cup butter, melted
1/2 cup brown sugar
1 T flour
1/2 cup chopped nuts
3/4 cup chocolate chips

Combine and pour over base. Bake for 30 minutes at 350.

O Henry Squares

2/3 cup margarine
1 cup brown sugar
1/2 cup corn syrup
4 cups oatmeal
1 cup coconut
2 tsp baking soda
2 tsp vanilla
2/3 cup peanut butter
3/4 cup chocolate chips

Bring margarine, sugar and corn syrup to a boil. Remove from heat and add oatmeal, coconut, baking soda and vanilla. Stir well and pour into a cookie sheet. Bake 8-10 minutes at 350. Meanwhile, melt the peanut butter and chocolate chips together (about two minutes in the microwave works well) to make the icing and ice the squares while still warm. Cool, cut into squares and keep in the fridge.

Rice Krispie Squares

1/4 cup margarine
40 large marshmallows or 5 cups mini marshmallows
1/2 tsp vanilla
6 cups Rice Krispies cereal

Melt the margarine in the microwave. Add the marshmallows, microwave 2 minutes at a time and stir until melted and smooth. Add the vanilla and the cereal, stir until coated. Press into a 9x13 pan and cool.
