Chocolate Chip Flax Muffins

1 3/4 cups flour
1/2 cup ground flaxseed
1/2 cup sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 egg, beaten
1/4 cup oil
1 1/2 cups milk
1 tsp vanilla
1 cup chocolate chips

Fill muffins cups 3/4 full. Bake at 375 for 18 minutes. Makes about 1 1/2 dozen.

The Best Coconut Muffins

1 egg
1/2 cup milk
1/4 cup oil
1 T. vanilla
1 tsp salt
2 tsp baking powder
1/2 cup brown sugar
1 cup coconut
1 1/2 cups flour

Bake 20 minutes at 350.

Pumpkin Muffins

4 eggs
2 cups white sugar 
1 cup oil
1 3/4 cups pure pumpkin (1 - 14 oz can)
3 cups flour
1 T. cinnamon
2 tsp baking powder
2 tsp baking soda
1 tsp salt
2 cups chocolate chips

Beat eggs, add sugar, oil and pumpkin. Add dry ingredients, mix until smooth, add chocolate chips. Fill muffin cups 3/4 full. Bake at 375 for 15 minutes. Makes about 3 dozen.

Cinnamon Muffins

2 cups flour
1 cup sugar
4 tsp. baking powder
1 T. cinnamon
1/2 tsp salt
1 cup milk
1/2 cup oil
2 eggs

Mix and put into muffin tins. Sprinkle tops of muffins with a little extra cinnamon and sugar. Bake for 13-15 minutes at 375. Makes 16-20 muffins.

Blueberry Cream Muffins

4 eggs
2 cups sugar
1 cup vegetable oil
1 tsp vanilla
4 cups flour
1 tsp salt
1 tsp baking soda
2 tsp baking powder
2 cups sour cream
2 cups fresh or frozen blueberries or saskatoons

Beat eggs, gradually add sugar. Slowly pour in oil and vanilla while mixing. Combine dry ingredients and add alternately with sour cream. Gently fold in blueberries. Spoon into greased muffin tins. Bake at 400 for 20 minutes. Makes 2 dozen.

Cinnamon Oatmeal Muffins


2 c. flour
1 c. quick oats
1/2 c. sugar
1/4 tsp. baking soda
2 tsp. cinnamon
1 egg
1/2 c. butter, melted
1 c. milk

Mix dry ingredients, add beaten egg, butter and milk. Mix but don't overmix. Spoon into muffin tins and bake 20 minutes at 375. Makes 1 dozen.


These are not the most exciting in flavour but they are dense and have a hint of cinnamon. Perfect for a quick breakfast!

Raisin Bran Muffins

An interesting take on bran muffins, using cereal.


2 cups Raisin Bran cereal
1 cup milk
1 T baking powder
1 1/4 cups flour
1/3 cup brown sugar
1 egg, beaten
1/2 cup applesauce
2 T margarine, melted


Mix the cereal and the milk and let stand 3 minutes. Add the egg, applesauce, sugar and margarine. Then add flour and baking powder, stir until moist. Spoon into muffin tins and bake 20 minutes at 400.

Crumble Muffins

2 cups flour
1 cup sugar
3/4 cup margarine

Blend until crumbly. Reserve 1/2 the mixture for the topping (or a little less than half works too).

To the remaining crumbs, add:
1 cup sour milk
1 egg
1 tsp baking soda
1/2 cup chocolate chips

Fill muffin tins with batter and top with a spoonful of reserved crumbs. Bake 25 minutes at 350.

Honey Oat Muffins

1 1/2 cups Honey Bunches of Oats cereal
1 1/3 cups flour
1 T baking powder
1/2 cup sugar
1 egg, beaten
1 cup milk
1/3 cup melted butter


Mix together well and fill muffin tins 2/3 full. Bake 15 minutes at 400.

Note: I have also used Cranberry Almond Crunch cereal with good results.
