Gingerbread Cookies

These gingerbread cookies are easy, soft and sparkly. They go perfectly with a hot cup of coffee.

3/4 cup butter
3/4 cup brown sugar
1 pkg (6-serving) butterscotch pudding & pie filling
1 egg
2 cups flour
1 tsp baking soda
1 T ginger
1 1/2 tsp cinnamon

Mix well and roll into balls. Roll each ball in sugar and flatten on a cookie sheet with the bottom of a cup. Bake 8 minutes at 350.
