Good alternative to Rice Krispie squares, especially when you don't have enough Rice Krispies!
1/2 cup margarine
64 large marshmallows or 8 cups mini ones
2 tsp vanilla
2 cups oatmeal
2 cups coconut
3 cups Rice Krispies
Melt the margarine and add the marshmallows. Microwave on high 2 minutes at a time until marshmallows are melted. Stir in vanilla and other ingredients. Press into a 9x13 pan.

Sour Cream Chocolate Cake
2 cups sugar
2 eggs
2 cups flour
2 tsp baking soda
pinch of salt
1/4 cup cocoa
1 tsp vanilla
1 cup hot water
Mix everything together well. Bake in a greased 9x13 pan about 30 minutes at 350 or until toothpick comes out clean. You can also do this as cupcakes; it'll make 2 dozen. I have done this cake with all whole wheat flour and it's good that way, too.
Ice with buttercream icing or chocolate icing. Or eat it plain with ice cream or whipped cream and fruit. It's good any way.
Sweet & Sour Sausage
1 pkg. farmer sausage (two sticks)
1/2 cup brown sugar
2 T cornstarch
2/3 cup ketchup
1/2 cup vinegar
1 cup water
Cut up sausage and brown slightly in the oven by placing it in a roaster and baking it uncovered for 20 minutes at 350. Meanwhile, combine remaining ingredients. Once sausage is browned, pour sauce over and bake another hour, covered. Serve over rice.

Savoury Potatoes
My family's favourite potatoes. I always make these with meatloaf.
6 potatoes
1/3 cup butter, melted, or a bit more
1 tsp garlic salt or powder
1 tsp celery salt
1 tsp paprika
1/4 tsp cayenne pepper
3/4 tsp Worcestershire sauce (optional)
Peel and cut up potatoes, place in a small roaster. Combine butter and spices and pour over potatoes, toss to coat. Cover and bake for 45-60 minutes at 350.
I double this recipe for our family.

Sugar Cookies
1 cup butter or shortening
1 cup sugar
2 eggs, beaten
1 tsp vanilla
2 1/2 cups flour
1 tsp baking soda
2 tsp cream of tartar
1/2 tsp salt
Cream butter and sugar, add eggs. Add remaining ingredients and mix well. You can roll out the dough and cut out shapes with cookie cutters, or you can do it the easy way and roll the dough into balls and flatten them on the cookie sheet with the bottom of a cup. Either way, bake them at 350 for 8-10 minutes (less time for cookie cutter cookies and more time for flattened balls since they will probably be thicker).
Icing:
Melt about a tsp of butter, add a little water and then add icing sugar until it reaches your desired icing thickness. You can add food colouring and sprinkles and whatnot. Ice and decorate the cookies once they've cooled.
Oven Apple Pancake
1 apple, sliced
1 T lemon juice
1 T sugar
3 eggs
1/2 cup plus 2 T flour
1/2 cup plus 2 T milk
3 T butter, melted
3 T sugar
3 T brown sugar
1 T cinnamon
Combine lemon juice and sugar and toss with sliced apple. Beat together eggs, milk and flour. Pour melted butter into an oven-proof frying pan or small baking dish. Add batter and arrange apple slices on top. Sprinkle with sugar and cinnamon. Bake 20 minutes at 425. A double recipe will make a 9x13 pan.
Teriyaki Steak Marinade
Barbecuing is about the only way we do steak at our house. Here is our favourite marinade recipe.
3/4 cup oil
1/4 cup soy sauce
1/4 cup honey
2 T onion salt
2 T garlic salt
1 1/2 tsp ginger
Mix all ingredients and shake well. Marinate steak for at least 24 hours (I usually do a couple of days, turning after the first day). Take the steaks out about a half hour before barbecuing and let them drip off to avoid flare-ups on the barbecue.
