Peach Cobbler

3 peaches, diced
1/4 cup sugar
1/2 cup butter
1/2 cup sugar
1 tsp. vanilla
1 cup flour
1 tsp. baking powder
pinch of salt
1/2 cup milk

Combine peaches and 1/4 cup sugar, spread in an 8x8 pan. Combine the rest and spread over top of peaches. Bake 40 minutes at 350.
 
This version also works with canned peaches, if you drain them first. I would also cut the sugar in half that you sprinkle on them in the pan.

 
Version 2:

28 oz. can of sliced peaches
1 yellow cake mix
1/2 cup butter
1/2 tsp. cinnamon

Pour peaches with juice in 9x13 pan. Top with cake mix. Dot with small slices of butter, sprinkle with cinnamon. Bake 45 minutes at 350.

Chicken Stew

1-2 chicken breasts
salt & pepper
garlic powder
3 potatoes
4 carrots
onion, chopped
2 cups chicken broth
1 cup milk
2 T. flour
peas
parsley
sprinkle of thyme

Brown and season chicken in oil. Add veggies and broth, cook covered 20 minutes until vegetables are cooked. Add peas and milk shaken with flour, parsley and thyme. Simmer until thickened and hot through.

Salisbury Steak

Patties:

1 lb. ground beef
1 egg
1/3 cup milk
2/3 cup bread crumbs or oatmeal
1/2 to 1 pkg. onion soup mix
salt & pepper
1 tsp. parsley

Mix. Shape into hamburger patties (makes about 6-7), place on a foil-lined cookie sheet and bake them 10 minutes at 350, or fry them until browned in a frying pan.

Gravy:

1/3 cup butter
1/3 cup flour
3 cups water
3 pkg. beef bouillon

Melt the butter, whisk in the flour, then the water and beef bouillon. Simmer until it thickens.

Pour the gravy over the patties in a roaster or casserole dish and bake 45 minutes at 350, or simmer them on the stove top. Serve over mashed potatoes. You can also throw in sliced onions.

Rice Pudding

The perfect solution for leftover rice.

2 cups cooked rice
1/2 cup sugar
2 cups milk
2 eggs, beaten
1/2 tsp vanilla
1/2 tsp cinnamon
raisins (optional)

Mix well and microwave 9 minutes, stirring every 3 minutes, until boiling and slightly thickened. Refrigerate to thicken completely.

Chocolate Chip Flax Muffins

1 3/4 cups flour
1/2 cup ground flaxseed
1/2 cup sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 egg, beaten
1/4 cup oil
1 1/2 cups milk
1 tsp vanilla
1 cup chocolate chips

Fill muffins cups 3/4 full. Bake at 375 for 18 minutes. Makes about 1 1/2 dozen.

The Best Coconut Muffins

1 egg
1/2 cup milk
1/4 cup oil
1 T. vanilla
1 tsp salt
2 tsp baking powder
1/2 cup brown sugar
1 cup coconut
1 1/2 cups flour

Bake 20 minutes at 350.

Pumpkin Muffins

4 eggs
2 cups white sugar 
1 cup oil
1 3/4 cups pure pumpkin (1 - 14 oz can)
3 cups flour
1 T. cinnamon
2 tsp baking powder
2 tsp baking soda
1 tsp salt
2 cups chocolate chips

Beat eggs, add sugar, oil and pumpkin. Add dry ingredients, mix until smooth, add chocolate chips. Fill muffin cups 3/4 full. Bake at 375 for 15 minutes. Makes about 3 dozen.
